The University of Cambridge has said removing beef and lamb from its menus has cut food-related carbon emissions by a third.

How much of that reduction was due to people simply buying their food elsewhere, ie. did they sell less food? Well yeah. Since life based forms are made up of mostly carbon I can see them taking up about a third of the space in Cambridge.
